Serves: 4
Peanut Dressing
4 tbsp toasted sesame oil
4 tbsp natural salted peanut butter
2 tbsp coconut palm sugar
2 tbsp tamari
1 tsp lime juice
2 tsp ginger, grated
1 tsp garlic grated
Prepare the dressing by whisking all the ingredients and set aside.
Yields: little over 9 tbsp dressing. 2 tbsp + 1 tsp dressing / serving
Noodle Bowl
16 ounces thin rice noodles
2 tsp salt
Cook noodle according to the package instruction in salted water. Once the noodle is cooked, drain and rinse in cold water to drain.
3 ounces tofu / serving
2 carrot, chopped into matchstick size pieces
4 green onion, chopped
fresh cilantro for topping
Add noodles, carrots, green onion, basil, tofu and peanut dressing. Serve immediately.
