Vegan Hearts of Palm Crab Salad Sandwich

Serves: 4
Yields: 4 cups


1/2 cup onion, chopped into big pieces
1/4 cup carrot, grated
3 celery stalk, chopped into big pieces (keep 1/4 cup celery, chopped to add at the end)
1 small tomato, seeded and chopped

Add onion, carrot, celery, tomato to the food processor, pulse.


2 cans hearts of palm, drained

Add 1 can of hearts of palm and pulse.


1/2 cup vegan mayo
1 tsp horseradish
1 tsp by the bay seasoning

Add mayo, horseradish and old bay seasoning and pulse.

Add the 2nd can of hearts of palm and pulse until its mostly chopped.

1 tbsp carrot, grated
1/4 cup celery, chopped (1/2 celery)
1/2 small tomato, chopped

Stir in some large chunks of grated carrot, celery and tomato for color and texture.


5 springs of fresh dill - fronds chopped
1/4 tsp salt
1/4 tsp black pepper powder

Stir in dill, mix with salt and black pepper powder.

If the resulting salad is too wet, simply wrap it in a clean kitchen towel and twist out all the excess moisture.


8 slices of bread
avocado
lettuce / spinach

Serve on sandwich bread, avocado and lettuce / spinach.

Taste Note: Tastes Good. I added 2 tsp of by the bay seasoning and 2 tsp of horseradish, when we eat with bread, it tasted awesome, but when we eat just this, it was not that good, the seasoning was overwhelming. So reduced the seasoning and noted down. Hopefully next time, it should taste awesome when we eat this on its own.
