Nice and Slow

Serves: 2

2 cups spinach
1/2 avocado
1 cup blackberry / blueberry
1/2 cup gluten free rolled oats
1/4 tsp ground cinnamon
2 cups plant based milk


Add all ingredients to the NutriBullet Rx TALL Cup and extract until smooth. I did 30 seconds, removed and shook the jar and ran 1 minute cycle.

Note: I didn't read the recipe properly, it asked for blackberry, by mistake I added blueberry. I was thinking it would be that good, since flavoring ingredients in this smoothie are just avocado and blueberry, but it was really good. But if you are a sweet tooth person, you might have to add little sweetener to this. The taste also depends on the sweetness of the berry.

Thai Crunch Salad with Peanut Dressing

Thai Peanut Dressing

Serves: 4


1/4 cup creamy peanut butter
2 tbsp unseasoned rice vinegar
2 tbsp fresh lime juice
3 tbsp sesame oil
1 tbsp tamari
2 tbsp maple syrup
2 and 1/2 tbsp coconut sugar
1 tsp garlic cloves, grated
2 tsp ginger, grated
1 tsp salt
1 tsp red chili flakes

Combine all the above ingredients in vitamix, blend until completely smooth.

2 tbsp fresh cilantro, leaves

Add cilantro and blend for few seconds until cilantro is finally chopped.


Yields: 16 tbsp

Salad

Serves: 1


2 and 1/4 cups napa cabbage, shredded (1 napa cabbage for 4 servings)
1/4 cup red cabbage, shredded
1/4 cup shredded carrots
1/4 red bell pepper, thinly sliced into bite-sized pieces
1/4 small english cucumber, halved lengthwise, seeded and thinly sliced
1/2 cup + 1 tbsp edamame (2 pound organic edamame from Costco)
1 green onion, thinly sliced
1 tbsp cilantro, chopped


Combine all of the ingredients in a bowl and toss to combine.


If serving right away, drizzle the peanut dressing over top and toss; otherwise, serve the dressing on the side so the salad doesn't get soggy.

Tummy Tamer

Serves: 2

1 tbsp chia seeds
1/2 cup pure apple juice
1 and 1/2 cups water

Taste Note: Tastes Almost AWESOME. I could taste just grapes in this and nothing else, so if your grapes are sweet, this would be awesome.

Honey Mustard Dressing

Serves : 2

2 tbsp creamy unsweetened & salt free cashew butter
1 tbsp spicy mustard
2 tbsp maple syrup
1/4 tsp salt
1/4 tsp black pepper powder
2 tbsp water

 
Whisk together all the ingredients. Thin with water until pourable.

I Oat So Far

Serves: 2

1/2 gluten free quick cooking rolled oats
2 cups collard greens (1 large and 2 small, just the leaves and no stems)
1 banana
1 cup blueberry
20 raw almonds
1 tbsp blackstrap molasses / any other sweetener of your choice
2 cups water

Note: The recipe didn't call for any sweetener and I don't have molasses in the picture. I blended everything for 30 seconds and tasted, it tasted not that good, so much collard green taste, so I added 1 tbsp of molasses, you can add whatever sweetener you like.

Spicy Red Curry Cauliflower Wings

Serves: 4


Cauliflower

1 head cauliflower, large stalks removed cut into bite size pieces (I had 1 pound and 10.24 ounces of chopped cauliflower)

Batter

3/4 cup brown rice flour
1/8 tsp salt
1/2 tsp curry powder
2 tsp tandoori masala blend from whole foods
1/2 cup plant based milk
6 to 8 tbsp water (I used 6 tbsp)


Preheat the oven to 425 degrees F and line a baking sheet with parchment paper (important or the wings will stick)

Prepare the batter. Mix dry ingredients together and then add milk and 6 tbsp water to start. Stir with a whisk or fork until well combined. You want the batter thick but pourable so it can adhere to the cauliflower - too runny and it won't stick. Add only enough water until you reach the right consistency. Add more brown rice flour if it becomes too thin.

Once the oven is preheated, add the cauliflower to the batter to coat. Shake off excess and place on baking sheet. Give each piece 1" of room to prevent sogginess. Depending on the size of your cauliflower this may require cooking on 2 baking sheets or in 2 batches.

Bake for 25 minutes.

Sauce

1/4 cup Thai Kitchen red curry paste
2 tsp coconut oil, melted
2 tsp maple syrup
3 tbsp water


In the meantime, prepare the sauce by whisking together curry paste, coconut oil, maple syrup. Add just a bit of water to thin so it resembles a glaze consistency.

Once the cauliflower has finished baking, remove from the oven and dip / toss in the glaze 1 - 2 piece at a time. Shake off excess, then place back on baking sheet and bake for another 20 to 25 minutes or until browned on the edges and the glaze has caramelized.

Green Chutney

1 bunch fresh cilantro (~ 3 ounces), stems mostly removed
3 cloves garlic, crushed
1/4 tsp salt
1/4 tsp black pepper powder
? tbsp lime juice (juice from 1 large lime)
1 tbsp coconut sugar or maple syrup
2 tbsp water

While baking, prepare chutney by adding all ingredients to blender and blending until creamy and smooth.

Let cauliflower cool slightly and then serve immediately. Best when fresh.

Note:

  1. Had it with both green chutney as well as vegan ranch dressing (tasted so awesome with ranch dressing).
  2. This is definitely not spicy, we both felt it was sweet. If you this to be spicy, omit maple syrup.


Soothe Operator

2 cups mixed lettuce (3.5 ounces)
3/4 cup celery stalks, chopped (3 small)
1 banana
1 and 1/2 cup papaya / pineapple
2 cups water


Add all ingredients to the NutriBullet Rx TALL Cup and extract until smooth. I did 30 seconds, removed and shook the jar and ran 1 minute cycle.

Note: Very light. I never get organic papaya, so I added pineapple. I tasted pineapple and some strange taste, I think its from baby lettuce
