Chipotle Black Bean and Sweet Potato Chili

3/4 Cup Black Beans (1 Cup)

Overnight soak the beans in water.

1/2 Tsp Salt
4 Cups Water

Cook beans with salt and water, allow it to boil and simmer in medium low for 45 minutes.

Yields: 2 Cups


2 Tbsp Olive Oil
1 Cup Onion, Chopped (2 Cups)
1 Red Bell Pepper, Chopped (2)

1 Tbsp Garlic Cloves, Chopped


Heat oil in pan, add onion, bell peppers and saute for 5 minutes in medium flame.

Add garlic and saute for a minute.


2 Pound Tomatoes, Chopped (3 Pounds)
2 Cups Sweet Potato, Chopped (4 Cups - 1.7 Pounds)
1/2 Tsp Black Pepper Powder (1 Tsp)
1/2 Tsp Chipotle Powder (1 Tsp)
1 and 1/4 Tsp Salt (2 Tsp)
2 Tbsp Ground Cumin (3 Tbsp)
2 Cups Water (4 Cups)


Add cooked beans, tomatoes, sweet potatoes, black pepper powder, chipotle powder, salt, ground cumin, water, allow it to boil, simmer in medium, uncovered for 30 minutes.

10 Cilantro, Chopped
3 Green Onion, Chopped
1 Avocado, Sliced

Add cilantro or green onion or avocado, whatever you have in hand to garnish.


Taste Note: Tastes AWESOME
Serves: 2 as a main course meal.
