Green Beans with Lemon and Garlic


1 pounds green beans, ends trimmed, chopped into 2 pieces

water
2 tsp salt

Add salt to large pot of water and bring to a boil. Blanch green beans in boiling water for 2 minutes. Drain and shock in a bowl of ice cold water to stop from cooking.

2 tbsp coconut oil
1/2 tbsp garlic, grated
1/4 + 1/8 tsp red pepper flakes


1/2 tsp salt

Heat oil in a pan reduce the heat to low, add garlic, red pepper flakes, saute in low for 1 minutes.

Add salt and mix well.

Add blanched green beans, stir and continue to cook the beans for 5 minutes in medium flame.

1/2 tbsp lemon zest (zest from 4 lemons)

Add lemon zest just before serving.
