Raw Buckwheat Porridge

Serves: 2

1/2 cup raw buckwheat groats


overnight soak buckwheat in water. After soaking rinse well in a strainer several times.

1 cup almond milk
2 tbsp chia seeds
2 dates / 2 tbsp maple syrup
1/8 tsp salt
1/2 tsp vanilla extract
1/2 tsp ground cinnamon
2 tbsp cacao powder (optional - to make it as chocolate buckwheat porridge)

Set aside 2 tbsp of socked buckwheat groats (to stir in later). This will give the creamy porridge a nice chewy texture.

place buckwheat groats in vitamix, along with almond milk, chia seeds, dates, salt, vanilla extract and ground cinnamon. Process until combined and smooth.

Divide this into 2 serving cups. Stir in 1 tbsp of reserved groats in each serving cup for a nice texture.

Toppings:

1 banana, chopped
Chopped fruit or dried fruit (berries, kiwi, apple, nectarines, peaches, mango, raisins, etc)
1 tbsp almond butter
1 tsp Cacao nibs


Add your favorite topping and enjoy.

Taste Note: Tastes AWESOME and very very filling. I used 1/2 banana, 1/2 green kiwi, 1/2 golden kiwi, 4 blackberries and 4 raspberries per serving.
Chocolate Buckwheat Porridge: While blending add 2 tbsp cacao powder to make it as chocolate buckwheat porridge
