Zucchini Date Bread

Flax Egg

1 Tbsp Ground Flax Meal
3 Tbsp Warm Water

Mix flax meal and water and keep it aside.


Soften Dates


1 Cup Medjool Dates, Pitted and Chopped (10 Dates)
2 Cups Water

Bring 2 cups water to boil. Pour boiling water over the chopped dates. Allow them to soak for 30 minutes. Drain them and set them aside.


2 Cups Teff Flour
2 and 1/2 Tsp Baking Powder
1 Tsp Ginger, Ground
1/2 Tsp Salt

Mix flour, baking powder, ground ginger, salt in a large mixing bowl

1 Tsp Apple Cider Vinegar
3/4 Cup Coconut / Almond Milk

Add vinegar to the milk in a medium size mixing bowl and whisk together vigorously until the mixture is frothy. 

1/3 Cup Maple Syrup
1/3 Cup Coconut Oil, Melted

1 and 1/2 Cup Zucchini, Grated, Put Zucchini in Nut Milk bag and Squeeze all the water out of it

Add prepared flax mixture, maple syrup, oil to the milk.

Add these wet ingredients to the flour mixture, along with dates and zucchini. Fold all the ingredients together until they are just evenly mixed.

Preheat the oven to 350 F

Lightly oil 9 x 5 loaf pan.


Pour the batter into the loaf pan, bake for 1 hour or until the toothpick or knife inserted into the loaf comes out clean.
