Beans
1/3 Cup Garbanzo Beans
1/3 Cup Red Kidney Beans
1/3 Cup Cannellini Beans
Combine all 3 beans and overnight soak all of them together.
1/2 Tsp Salt
4 Cups Water
Wash the beans in fresh water add salt and water and allow it to boil, reduce the heat and cook the beans for 1 hour in low flame.
Tomato Puree
1 lb Tomatoes
Blend all the tomatoes and make tomato puree.
Soup
2 Tbsp Olive Oil
1 and 1/4 Cup Big Onion, Chopped (1 Big Onion, Large)
10 Garlic, Grated
Heat olive oil in a large soup pan, add onion, saute for 4 minutes in medium flame. Add garlic and saute for 1 more minutes in medium flame.
1 lb Carrots, Chopped
1 lb Beans, Chopped
1 Bunch Costco Celery Stalks, Chopped
Add carrots, beans, celery, saute for 5 more minutes.
1 lb Zucchini, Chopped
1 Bunch Kale or Collard or Swiss Chard Stems Chopped
Add zucchini , greens stems and saute for 5 more minutes.
1 lb Tomatoes, Chopped
Add tomatoes and saute for 5 more minutes.
Spice Variation 1:
2 Tsp Thyme
1/2 Tsp Turmeric Powder
1 and 1/2 Tbsp + 1/2 Tsp Salt
1 Tbsp + 1/2 Tsp Black Pepper Powder
Spice Variation 2:
1 Tbsp Basil
1/2 Tbsp Thyme
1/2 Tsp Turmeric Powder
1 and 1/2 Tbsp + 1/2 Tsp Salt
